Tropical Ceviche

Close your eyes and take a bite of this tropical ceviche. It will make you feel like you were on a tropical island somewhere. I guess what I’m saying is the only thing missing is the beach ha ha ha. Summer cannot come soon enough that’s for sure!

This ceviche Has just a touch of sweetness from the fruit but not to where it overpowers the rest of the flavors. It is so fresh and delicious this is a must-have recipe. Next time you’re going to the beach for a vacation take this recipe I promise it will be a big hit.

I got this inspiration from a local restaurant that made a tropical ceviche that was so delicious. The only difference is, it had a different fish but it was very good. I was craving that dish constantly so I decided to create it at home myself. Of course, it’s not the same recipe because I could not find the fish that was in the original recipe which was a yellowtail tuna. Instead I found a fresh white fish called swai. It came in the market that day and I decided to give that a try. I was not disappointed it turned out fantastic it was not fishy it was soft and delicate and perfect for this dish. If you can’t find either fish in your local grocery ask the seafood counter what fish would work great in a ceviche.

Ingredients
  

  • 3 Filets swai fish
  • 5 larg limes
  • 2 jalapeno
  • 2 green onion
  • 1/2 cup mango
  • 1/2 cup pinaple
  • 1/2 cumber
  • 1 cup baby heirloom tomatoes
  • 1/2 cup cilantro
  • 1/2 cup jicama

Instructions
 

  • First is marinating the fish. Take three limes and squeeze the juice and add two jalapenos to a food processor/ blender and blend. Chopp the fish in cube-like pieces. Pour the lime mixture over the fish and set it in the fridge for a few hours. You'll notice the transparency turning white as the fish cooks in the lime/jalapeno juice.
  • Next cut up all remaining ingredients and set aside.
  • When the fish is ready pour out the marinade and squeeze the remaining limes over the fish. Next, combine all the rest of the ingredients and serve with corn chips and a cold beer. I hope you enjoy this recipe. Cheers!!!
