Chipotle Honey Vinaigrette

This is such a versatile dressing. It can be a little spicy for some but this type of spice will mellow out in the end. Especially when it’s over a beautiful salad with lots of veggies. It’s not the kind of spice that makes you run for a glass of milk. After all, chipotle peppers are the star of the show. If you find it overpowering, use fewer chipotle peppers.

This dressing can be used for lots of things other than just salad. It’s got a nice vibrant/tangy flavor that will go well with fish or shrimp tacos, burgers, grilled chicken sandwiches, taquitos, burrito bowls, and more…

Tip: I think this dressing’s best friend is avocado. The smooth creaminess pairs so well with this dressing.

Note: This dressing is closely compared to the fast food chain Chipotle’s dressing. However, I don’t have the ingredients for it. This is my version of a fresh chipotle vinaigrette with just a few ingredients.

Ingredients
  

  • 1/2 cup of olive oil
  • 3 tablespoons honey
  • 1/4 cup red wine vinegar
  • 3 tbsp can chipotle pepper in adobo
  • 1/4 teaspoon dried oregano
  • 1 lime zest and juice
  • 1/2 tablespoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Add all of the ingredients to a blender or cup and blend well until it is nicely emulsified.
