The Perfect Cheesy Ribeye Sliders

This recipe is so easy and sure to please any crowd. I mean, what’s not like? You have tender ribeye and cheesy goodness. This was definitely a hit at my house. These sliders are perfect for pretty much any occasion (lunch, appetizer, dinner) and perfect for football Sunday 🏈 (go pack 😉).

Let’s talk about the ribeye… I found placing your steak in the freezer for about 40 minutes to firm up made it easy to slice super thin. As you can see in the picture above, it’s as thin as a credit card. This makes it that much more tender.

For less mess, I like to use my cast iron and add everything to one pan. You don’t have to use a cast iorn If you don’t have one, any large pan will do. I start with the veggies first. Once they start to caramelize I add the meat. Cook until nicely browned.

Pro tip- to make things easy on time, slice the meat and veggies in advance until your ready to cook. You can also do this the night before.

You can pretty much use any roll you like or bun. These are the rolls I used. I found them at Walmart if you have one near you. They were so cute and soft. They made the perfect bite.

Easy Cheesy Ribeye Sliders

Ingredients
  

  • 2 ribeye steaks
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 white onion
  • 1 tbsp butter
  • salt & pepper
  • 1/2 block of Velveeta cheese
  • 1 cup shredded cheese of choice (I used shredded cheddar)
  • 1 pack brioche rolls (or rolls of choice)
  • 1 5 oz can of condensed milk

Instructions
 

  • First, you want to slice your steak in thin slices. Next slice both bell peppers and onion.
  • In a large pan add a tablespoon on butter and add veggies. Sprinkle with salt and pepper cooking until slightly caramelized. You then add the steak and cook until browned.
  • In a separate small pan add half a block of Velveeta, shredded cheese and small can of condensed milk. Stir until melted. This should only take about 10 min. Be careful not to burn the cheese. Cook it on low heat.
  • Toast buns, assemble sandwiches and enjoy.
