Bacon Jalapeno Shrimp- with a sweet & spicy pineapple dipping sauce

Everything about this sounds amazing. It’s sweet and spicy and really easy to make. If you’re a shrimp lover like me then you will love this appetizer.

My favorite thing other than bacon haha, is how the jalapeno shrivels up. I also like using pickled jalapeno too. Either one works great, but I do love a fresh slice of jalapeno.

Now let’s talk about the sauce. This sauce is sweet and spicy and only takes a few minutes to make. It only has 4 ingredients and is birsting with flavor. This sauce can be used for lots of other dishes too like grilled or fried chicken sandwiches, and chicken wings 🤤. I will be making this sauce again soon.

This recipe is great for parties. If your crunched on time you can prepare it the day before and pop in under the broiler when you are ready to serve. I’m definitely making this during football season.

Ingredients
  

  • 2 Lbs Shrimp- cleaned and deveined
  • 1 Package Thin sliced bacon
  • 4-6 jalapeno
  • 1 tsp chili powder
  • 1 tsp old bay
  • Pinch of salt & pepper

Sweet & Spicy Dipping Sauce

  • 1 tsp siracha
  • 1 tbsp fried chili in oil
  • 1/2 Cup pineapple preserves

Instructions
 

For the shrimp

  • Preheat the broiler while you prepare the shrimp.
  • First, make sure your shrimp is clean and dry. Line them on a paper towel and season on both sides.
  • Next you will slice your bacon and half and slice your jalapeños. Take one shrimp and one jalapeño and place the jalapeño slices in the middle of the shrimp. Wrap your shrimp with half of the bacon and set on a wire rack.
  • Place your wire rack on a baking pan lined with foil and broil for 15 minutes on each side until the bacon is crispy.

Dipping Sauce

  • Add all of the ingredients to a pot and cook until nicely combined and bubbly.
