Turkey Butter Lettuce Tacos

These tacos are healthy yet loaded with flavor! You wont even notice the tortilla is missing. This dish is great for dinner or an appetizer.

I tend to make heathier food when the weather is getting warm and hot. Its refreshing and leaves you feeling good all the way around.

These days we are working around the corona virus, so ingredients are hard to come by. Especially ones that don’t have a long shelf life, like vegetables and fruit. So I decided on picking up some butter lettuce. It is packaged as a living lettuce with it’s roots still attached. It will preserve freshness and last longer.

What Is Butter Lettuce?

Butter lettuce is a sweet, tender delicate lettuce. It forms in a shape of a rose and has round-shape like leaves and is mild in flavor. The large outer leaves are perfect vessels to hold food for low-carb meals. For instance I used them for my turkey tacos. They filled up nicely and are super cute to serve.

As for the tacos, I did not have any taco seasoning, so I decided to try my own version. I used a blend of ancho chili powder, cumin, oregano, garlic salt, and ground pepper. To my surprise it turned out really tasty. The bonus using your own blend of seasoning is, you can control the amount of salt, so its not loaded with sodium.

I also love fresh toppings, so I used a cherry tomato chopped salsa, sour cream, shredded monterey jack cheese, avocado and a squeeze of lime. YUMMY!

Healthy Turkey Tacos

Low-carb turkey tacos that are loaded with flavor.

Ingredients
  

  • 1 Ground turkey
  • 1 tbsp olive oil
  • 1/2 Onion chopped
  • 4 tbsp Ancho chili powder
  • 1 tbsp Oregano
  • 2 tbsp Cumin
  • 1 tbsp Ground pepper
  • 1 tbsp Garlic salt
  • 1 tsp Red pepper flakes
  • 1 Butter lettuce

Toppings

  • 1 tsp Sour cream
  • 1 tsp Shredded moterey jack cheese
  • 1 tbsp fresh chopped salsa
  • 1 slice Avocado
  • 1 lime

Instructions
 

  • Brown turkey in a cast iron pan or any non stick pan with olive oil. When the turkey is brown add onions and seasoning. Continue cooking until the seasoning is well incorperated.
  • Wash and seperate lettuce leaves. Begin to fill the lettuce with meat and top with sour cream, salsa, cheese and avocado. Squeeze a little lime and serve.
