Delicious Fideo Soup with Guajillo Peppers
Sopa de Fideo, also known as Mexican noodle soup. This is one of my favorite Mexican soups. It is layered with rich flavors and spice. This satisfying and comforting soup is also vegetarian and vegan-friendly. I hope you enjoy this soup as much as we do.
A few tips:
Toast the noodles– Lightly coat the noodles with olive oil. Toast the pasta over medium-high heat, stirring often, until browned and releases nutty aroma (about 6 minutes).
Serve with a toasty quesadilla or taquito– This is the yummiest way to dip and enjoy your soup. Even though I love taquitos, I hate the mess and clean up of frying with oil. The way I made mine was a really easy. I sliced 1/2 inch thick piece of queso fresco and placed in on a corn tortilla. I then placed it on a plate in the microwave for about 30 seconds. Roll it up and place on a greased cast iron pan until they become toasted and crispy. Sprinkle with a little salt and serve along side your delicious soup.
Fideo Soup With Guajillo Chili
Ingredients
- 2 Tbs Olive oil devided
- 1/2 White onion
- 4 Dry guajillo chilies (seeds removed)
- 8 Roma tomatoes or 4 large tomatoes
- 1 jalapeno
- 4 Garlic cloves
- 1 Tbs Oregano
- 1 Tsp Cumin
- 1 Tsp Salt
- 1 Tsp Pepper
- 1 1/2-2 7 oz Fideo noodles
- 1 tbsp Chicken bullion
- 6 cups Chicken broth or water
Toppings
- Avocado
- Jalapeno
- Celantro
- Lemon/lime
- 1 Green onion
Instructions
- Lightly toast noodles in a large pot with one tbsp of olive oil until they are slightly browned and blistered. Set aside in a bowl.
- Add 1 tbsp of olive oil in a pan add diced onions and cook until they turn brown. Add the tomatoes, jalapeno, garlic, cumin, oregano, guajillo chilies, chicken bullion, and chicken broth (or water) and cook for about 10 min until everything looks nice and roasted. Add everything to a blender and blend until smooth.
- Add the noodles and simmer until the noodles are soft. Season with salt and pepper, serve and enjoy.
