Fresh & Delicious Aguachile
Aguachile is a Mexican Raw seafood dish made of shrimp, submerged in lime juice, blended chili pepper, cilantro, slices of cucumber and slices of onion, topped with fresh avocado and salt.
The shrimp is cooked with the acid from the lime juice and blended chili peppers. I marinate it for about an hour or more until you see it’s a little pink. The texture I feel is a bit tender compared to when the shrimp is cooked with heat.
It is so fresh and perfect on a hot day and pairs well with a cold beer 😉. You can also make it less spicy by removing the seeds from the chili, if you don’t like spicy. Serve it with tortilla chips or tostadas.
Aguachile
Raw cooked shrimp submitted in lime juice and blended chili.
Ingredients
- 2 Lbs Raw shrimp
- 5 Serrano chili
- 6 Large limes
- 1 Cucumber
- 1/2 Thinly sliced purple onion
- 2 Avocados
- 1 Bunch Chopped cilantro
Instructions
- Blend 5 serrano chilies (you can remove some of the seeds so it's not as spicy.) and juice from limes, blend until smooth. Pour over shrimp, cover in refrigerator for an hour until pink and cooked. You can chopp The shrimp or leave it whole.
- Next add cucumber, cilantro, avocado, purple onion and top with a little more fresh lime juice and salt.
- Serve with tortilla chips or a tostada and enjoy!
