Copycat Chef Wolfgang Puck’s Famous Chinois Chicken Salad
Well if you can’t go to Wolfgang Puck’s restaurant, then why not bring it to you 😁. What’s not to like about anything Wolfgang Puck makes. I can eat everything from his restaurant and I will be happy. He is definitely one of my favorite chefs. So I was happy to find a way to re-create one of his recipes.
Summer is almost coming to an end over here and I cannot get enough of salads I love every kind of salad and this is perfect to add to your favorite list. It also makes for a beautiful presentation for any gathering. I am definitely keeping this on my list of salads to make for one of my next events. This salad is not only beautiful but packed with flavor. This is definitely a heathy dish everyone will enjoy.
I hope you guys give this one a try. Don’t be worried about any of the ingredients, I found everything at my local grocery store and hopefully you won’t have a problem finding them either.
Tip: Radicchio gives a slightly bitter and spicy taste so next time I will replace it with red cabbage to mellow it out. Up to you if you want to use it or not.

Copycat Chef Wolfgang Puck’s Famous Chinois Chicken Salad
Ingredients
Salad ingredients
- 1 medium mango
- 5 cups napa cabbage
- 3 medium carrots, peeled
- 1/2 head radicchio or purple cabbage
- 4 cups mixed greens or watercress
- 3 cooked chicken breast – cooled
Toppings
- crisp fried wonton chips
- toasted sesame seeds
- cilantro
- green onion
Vinaigrette
- 1/3 cup soy sauce
- 1/2 cup rice wine vinegar
- 2 tbsp mustard
- 1 egg yolk
- 3 tbsp honey
- 1 tbsp sesame paste
- 2 tbsp pickled ginger
- 1 tbsp chili oil
- 3/4 cup peanut oil
- salt & pepper to taste
Instructions
- Add cabbage and mixed greens to a plate
- Slice radicchio thin and add it to the plate of greens.
- Next add peeled and diced mango and shredded carrots.
- Add toppings, pour vinegarette and serve
- For the vinaigrette add all ingredients to a small blender and blend until well incorporated.
