Pineapple Vinaigrette
So tangy and delicious!
I have been on a tropical kick since we’ve been back from vacation. We vacationed in Oahu and now all I want is tropical food. I figured out a way to incorporate pineapple into a vinaigrette and this dressing turned out absolutely amazing! It has a tangy, savory note and is great to top with any kind of grilled meat or seafood.
I used fresh squeezed pineapple juice but you can use pineapple juice from the store if you don’t want to go through the trouble. I just found that if I’m grilling pineapple anyways I might as well use some of it for the fresh juice too. This really makes the salad over the top delicious. I also swear by fresh is always better. ☺️

Pineapple Vinaigrette
Ingredients
- 1/2 cup Fresh Pineapple juice
- 3 tbsp Maui onion mustard (it’s amazing! Dip Into Paradise Maui Onion Garlic Mustard.)
- 1/3 cup Olive oil
- 1/4 cup white wine vinegar
- 1 lime zest and juice
- 1/4 tsp crushed red pepper
- 1/4 tsp salt and fresh cracked pepper
- 2 tbsp honey
- 1 garlic clove
Instructions
- Note: If the dressing is too loose add more olive oil and emulsify until it has a thicker consistency.
- Instructions are pretty easy add all of the ingredients above into a small blender and blend until it's nicely emulsified.
