Sago pudding, also known as tapioca pudding, is prepared by combining sago pearls with milk, adding sugar, and sometimes incorporating additional flavorings. This dish is made in various cultures, each with its own unique style and preparation methods. Southeast Asia, particularly Indonesia and Malaysia, is the primary producer of sago.

I have fond memories eating creamy tapioca pudding with my mom during my childhood. This delightful dish is nostalgic, now beautifully elevated with an array of vibrant fruit variations that bring lots of flavors and colors to elivate this traditional pudding.

My favorite so far is this mango and passion fruit combo. It’s so tropical, creamy, and delicious. This dessert is so versitile and there are so many creative ways to make it. I need to try every one!

What is Nata De Coco?

Also known as coconut gel. Its commonly sold in jars. Commercially made nata de coco is made by small farms in the Philippines, Laguna, quezon, thailand, vietnam, Milaysia, Indonesia, Yogyakarta.

Nata de coco can be used in fruit salads, to top on ice creams, soft drinks, bubble tea, yogurts and pudding.

Cooking Tip

Making sago pearls is simple; just boil them in plenty of water. They absorb a lot of water, which causes the liquid to become jelly-like. Once they are cooked, make sure to strain and rinse them thoroughly. The most important part is to prevent them from sticking to the pot, so remember to stir them every few minutes.

Mango Passion Fruit Sago

Ingredients

  • 1 cup small sago pearls
  • 6 cups water
  • 1/2 can sweetend condenced milk
  • 1 cup milk
  • 4 mangoes reserve half to blend with the milk mixture
  • 4 fresh passion fruit pulp
  • 1 cup frozen passion fruit juice chunks I found these in the freezer section of my grocery store.

Instructions

Sago

  • First, add 6 cups of water to a pot and bring it to a boil. Once boiling, add 1 cup of tapioca pearls. Stir frequently for 15 minutes, then strain and rinse the pearls thoroughly. Transfer the tapioca pearls to a large bowl and set aside.

Pudding

  • First, peel and dice 4 mangoes. Add half of the diced mangoes to a blender along with the pulp of a passion fruit, 1 cup of milk, and 1/2 can of sweetened condensed milk. Blend the mixture well. In a large bowl, combine the blended milk mixture with the tapioca pearls and 1 cup of frozen passion fruit juice chunks.
  • You can serve immediately, but I recommend refrigerating for at least an hour so it has time to set and chill.
