Greek Pita Pockets With The Best Grilled Lemon Chicken
This chicken was probably the best I’ve had in a long time. It was so simple with just 7 ingredients. Lemon is one of them, and of course it is one of my favorite ingredients to use. The key in making this extra lemony, is not only using the juice but using the zest too. This gives it that finger-licking good chicken!
Now that the chicken is good to go, lets get filling… This dinner was easy and fun. This would be great for a party anytime. Giving my family choices are perfect because I have my mom and a daughter who is a little picky, my husband who is not, and usually my daughter’s friends over visiting. This gives everyone options to choose what they like. Me, on the other hand, likes pretty much everything.
Creating this fresh and healthy pocket of goodness was a great idea. I used lots of fresh ingredients. Here are a few I used and a few other ideas you can try as well.

- Cucumber
- Tomatoes
- Onion
- Olives
- Feta cheese

Pita Pocket With The Best Lemon Grilled Chicken
Ingredients
Lemon Grilled Chicken Marinade
- 2 Chicken breast
- 2 Lemons + zest
- 2 Garlic cloves minced
- 1 Tsp Paprika
- 1 Tsp Salt and pepper
- 1 Tbsp Olive oil
- 1 Tsp Dried oregano
Pita Platter
- 3 Persian cucumbers
- 1/2 Purple onion
- 2 Tomatoes
- 1/2 Cup Olives
- 1/2 Cup Feta cheese
- 1 Romaine lettuce chopped
- 1 Lemon sliced
- 1 Cup Hummus
- 3 Pita bread sliced in half
Instructions
- Add all of the ingredients to the chicken breast and grill for about 30 minutes until done. Slice and add to a serving dish.
- Chop all of the veggies. Slice pita bread in half. Arrange around a serving platter along with lemon wedges, and add hummus to a bowl. Serve and enjoy!
