Delicious Thai Salad with Peanut Dressing
This salad tastes as good as it looks. I would pay money to get this at a restaurant. It’s filling and has a delicious peanut dressing I would lick my fingers for.
My favorite part of making hardy salads, is making a big enough batch to meal prep for a few days. This salad is perfect for that. The leftovers were enough for 3 days of lunch.
This is also vegetarian friendly. However, if you want to make this salad more filling and you are not a vegetarian you can add any protein you like. Some examples are tofu, shrimp or chicken. I used a rotisserie chicken from the market to make it quick and easy.
Thai Salad With Peanut Dressing
Delicious and hardy Thai salad
Ingredients
- 2 cups savory cabbage
- 1 cup purple cabbage
- 3 green onions (sliced)
- 1 carrot (julienned)
- 1/2 english cucumber (sliced)
- 1 jalapeño (sliced)
- 1 bunch of cilantro
- 5 small sweet bell peppers (sliced)
- 1/2 cup edamame
- 1/2 cup sliced almonds
- 4 basil leaves (sliced)
Peanut Dressing
- 1/2 cup smooth peanut butter
- 3 tbsp honey
- 1 garlic clove
- 1 tsp fresh ginger
- 3 tbsp hoisin sauce
- 1 tbsp chili sauce or sriracha
- 1/2 cup rice wine vinegar
- 4 tbsp vegetable oil
- 1/2 tbsp sesame oil
- 2 limes juiced
- dash of ground pepper
Instructions
- add all of the salad ingredients to a big bowl to serve.
- Add all of the dressing ingredients to a container and blend until smooth.
