Ingredients

Turkey Meatballs:

  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 3 tbsp milk
  • 3 lbs lean ground turkey
  • 2 tsp fresh grated ginger
  • 2 tsp green curry paste
  • 1 tsp sugar
  • 1/2 cup fresh cilantro
  • 1 tsp salt
  • 1 garlic clove, minced
  • 2 green onions, minced

Sauce:

  • 1 13.5 oz can unsweetened coconut milk
  • 3 tbsp thai green curry paste
  • 1 tsp brown sugar
  • 1 garlic cloves, minced
  • 2 limes, juiced
  • salt and freshly ground black pepperĀ , to taste

Serving:

  • jasmine or basmati rice
  • cilantro for garnish
  • lime wedge

Instructions

Instructions:

  • 1. Add all of the ingredients for the meatballs in a large mixing bowl and fold in until combined.
  • 2. Roll the meat mixture into balls and set aside.
  • 3. In a large skillet, heat the vegetable oil over medium-high heat and place the meatballs and brown on each side, about a minute per side. Remember not to worry about cooking them all the way through. They will finish cooking in the sauce.
  • Add the meatballs back to the skillet. Simmer them in the sauce until they are done cooking, and the sauce has thickened, about 15 minutes.
