Turkey Meatballs:
- 1 cup panko breadcrumbs
- 2 large eggs
- 3 tbsp milk
- 3 lbs lean ground turkey
- 2 tsp fresh grated ginger
- 2 tsp green curry paste
- 1 tsp sugar
- 1/2 cup fresh cilantro
- 1 tsp salt
- 1 garlic clove, minced
- 2 green onions, minced
Sauce:
- 1 13.5 oz can unsweetened coconut milk
- 3 tbsp thai green curry paste
- 1 tsp brown sugar
- 1 garlic cloves, minced
- 2 limes, juiced
- salt and freshly ground black pepperĀ , to taste
Serving:
- jasmine or basmati rice
- cilantro for garnish
- lime wedge
Instructions:
1. Add all of the ingredients for the meatballs in a large mixing bowl and fold in until combined.
2. Roll the meat mixture into balls and set aside.
3. In a large skillet, heat the vegetable oil over medium-high heat and place the meatballs and brown on each side, about a minute per side. Remember not to worry about cooking them all the way through. They will finish cooking in the sauce.
Add the meatballs back to the skillet. Simmer them in the sauce until they are done cooking, and the sauce has thickened, about 15 minutes.
