Shaved Brussels Sprout Salad With A Delicious Maple Honey Dressing
This salad is so fresh and tasty! I absolutely love the dressing and how easy and delicious it is. It's seriously the perfect fall salad every single year.

1 Mandoline slicer
1 hand blender optional
Dressing
- 2/4 cup extra virgin olive oil
- 1/4 cup white balsamic vinegar
- 2 teaspoon Creamy dijon mustard
- 1 teaspoon Oregano
- 5 grinds of salt
- 4 5 grinds of freshly cracked black pepper
- 2 tbsp Honey
- 4 tbsp Pure Maple syrup
Salad
- 15 Large Brussels sprouts (organic if possible)
- 1/4 cup Honey-roasted pecan pieces (salad topping)
- 4 Rounds of thinly sliced red onion
- 1/2 Cup Feta or goat cheese crumbled
- 1/2 large English cucumber
- 1/2 cup chpooed parsley
Salad
Rinse the Brussels sprouts, remove any bruised leaves. Roll them around on a paper towel to dry.
Using a mandoline or a knife, carefully shave the Brussels sprouts into very thin slices, discarding the tough ends. Place sprouts into a large serving bowl. Top with coarsely chopped cucumber, thinly sliced red onion, and chopped parsley.
Sprinkle the top with pecans and crumbled fetta.
Pour your dressing over the salad with your ready-to-serve. Toss gently to combine and enjoy!
