Steak & Eggs with skillet potatoes
This is a classic steak, eggs and potato recipe. It is such an easy and hearty brunch meal or breakfast-for-dinner dish using eye round steaks, sunny side up eggs and moon shaped crispy potatoes.
Steak and eggs are such a classic. Any time I’m cooking specifically for Robbie, I tend to incorporate steak. He’s a steak guy. So this recipe is perfect man food for brunch or dinner.
I especially love the sunny side up eggs here. Nothing is better than runny yolks on anything, especially over potatoes. Who can resist?

STEAK & EGGS WITH SKILLET POTATOES
A hearty breakfast with round eye steak, moon shape crispy potatoes and a fried egg.
Ingredients
- 5 Potatoes
- 1 Anaheim chili
- 1 Tbs Olive oil
- 1 Tbs Vegetable oil
- Eggs
- Eye round steak thin sliced
- Salt and pepper
- 1 Tbs Butter
- 1 Garlic
Instructions
SUNNY SIDE UP EGGS
- Melt butter in a nonstick skillet over medium heat. Swirl the pan so the butter is well distributed across the pan.Crack eggs slowly in pan and lightly sprinkle with salt and pepper once all eggs are in the pan. Cook over medium heat until the whites are just set and the yolks are still very runny, about 5 minutes.
Potatoes
- Add oil to skillet and add sliced potatoes and cook until crispy and brown. When almost done add chilies, garlic, salt and pepper.
Steak
- Heat oil in skillet, salt and pepper both sides of steak and brown on both sides.
