My Favorite Go-To Salad Dressing & Chopped Greek Salad
This dressing is so good! You can practically drink it 😉. It’s a light vinaigrette you can use on many different salads. I made a Greek chopped salad this time, but you can use it on a leafy green salad, or a chopped romaine too.
This salad is really simple. I’ll include the ingredients in this recipe below. This is perfect on a hot day, and holds up well when packed to take somewhere to go, like the pool, beach or lake 😉. You can also make this more hardy by adding grilled chicken. Then you can serve it for lunch, or a main dish. Yummy 😋!

A light vinaigrette with a touch of sweetness
Ingredients
Dressing
- 1/3 Olive oil
- 1/3 Red wine vinegar
- 1/2 Tsp Dry oregano
- 1/2 Tsp Dry basil
- 2 Tbsp White sugar
- 1 Lemon juiced
- Fresh cracked salt and pepper
Greek Chopped Salad
- 1 Large Cucumber
- 1/2 Purple onion
- 1 Cup Cherry tomatoes
- 1 Tbsp Fresh basil
- 1/2 Cup Seedless kalamata olives chopped
- 1/2 Cup Denmar Danish Feta
Instructions
Salad Dressing
- Pretty simple, add all of the ingredients and blend until emulsified. Store in a dressing container and place in the refrigerator until ready to serve.
Greek Chop Salad
- Slice cucumber in half and chop.
- Slice tomatoes in half.
- Slice purple onion in half and slice into thin slices.
- Give olives a rough chop.
- Slice cheese into cubes.
- Roll up fresh basil and slice.
