Grilled Salmon with Mango Salsa
I am so excited spring is finally here. Time to clean up the grill and get grilling. The weather is so nice the only food I feel like making is fresh and healthy. Salmon is a great option for a light dinner and if you like, you can make a big batch and save some for lunch the next day.
Also it takes minimal prep and there’s minimal clean up. I also love that you don’t have to skin the salmon first, it peels right off after grilling. I like to peal it over foil, then roll it up and throw it away. An easy healthy dinner for any day of the week.
Mango salsa…What?! You had me at mango. Salmon and mango are just the perfect pair. I’ve had salmon so many different ways and I just love it with a mango sauce. I am also a huge fan of fresh salsa. Actually, salsa in any way, shape or form. So why not add mango to give it that sweet and spicy kick.

- 1 Tbs Olive oil
- 1 Lime juiced
- 1 Tbs Pappy’s seasoning
- 1 Tsp Salt and pepper
Mango Salsa
- 1 Mango
- 1 Lime juiced
- 3 Tomatoes
- 3 Green onion
- 1/2 Cup Chopped cilantro
- 1 Jalapeño diced
- 1 Tsp Salt
