Copycat Trader Joe’s Spring Roll Cashew Dressing

I’m a huge fan of homemade dressings and sauces. They take a dish to the next level. Just knowing that they’re made with fresh ingredients makes me love them even more. One of my favorites is Thai peanut dressing, and when I saw Trader Joe’s had a cashew dressing, I had to try it. I was blown away by how delicious it was! I could practically drink it. Of course, there wasn’t enough for this sauce girly, so I figured out how to make it myself and let me tell you, it’s spot on delicious!
I might even prefer this dressing over the peanut dressings, although they’re quite similar. This dressing has a lighter nut flavor compared to the peanut dressings, where I find the peanut butter to be a bit overpowering. It all depends on how you make it and how much you use.
This dressing is a must-try! It’s served with spring rolls for dipping, and let me tell you, I’m a huge fan. I love spring rolls in all shapes and sizes. You can stuff them with anything you like – chicken, Oi shrimp, veggies, or even tofu. And guess what? You can also make this dressing into a salad or slaw dressing. It’s so versatile!
Cashew Butter
You can find cashew butter in stores or online, but it’s way easier to make than you think. All you need is a food processor and I used Trader Joe’s Organic Dry Roasted & Salted Cashews for this recipe. That’s it! Oh, and a little patience. As much time as it takes you to walk away and come back, you’ll have cashew butter.
It will have stages. The beginning, it looks like you need to scrape down the sides but just leave it alone. The next stage it will start to get clumpy. The final stage it will be creamy and there you have it! You’ve got your own delicious homemade cashew butter.
Copycat Trader Joe’s Spring Roll Cashew Dressing
Equipment
- 1 food processor
Ingredients
- 1 cup dry roasted &salted cashews
- 2 garlic cloves
- 1 inch piece fresh ginger
- 1 tbsp sesame oil
- 1 tbsp hoisin
- 1/4 cup rice wine vinegar
- 1 tbsp soy sauce
- 1 tbsp red chili flakes
- 1 tbsp tahini
- 1/2 cup water
- 2 tbsp sriracha
- 2 tbsp raw cane sugar
- 1 lime
Instructions
- First, add the cashews to the food processor and blend them until they achieve a smooth and creamy consistency. This process should take approximately 10 minutes.
- Next, add all of the remaining ingredients and blend again. If the texture is too thick, gradually add a little water at a time until you reach your desired consistency.
