Tropical Strawberry & Mango Loaf
Let me tell you how easy and delicious this loaf was… This is the kind of recipe that is a must-keep. It is soft and fruity on the inside with a crispy outer crust.
This tropical loaf is perfect for breakfast or even dessert. You could also turn them into muffins so they can be easy grab-and-go treats.
Ingredients:
For the Bread:
- 3/4 cup granulated sugar
- 1/2 cup milk
- 1/2 cup butter
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup diced strawberries
- 1 cup diced mango
For the Glaze:
- 2 cups powdered sugar
- 2 tablespoons butter
- 1/3 cup finely diced strawberries and mango
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons heavy cream
you can use melted butter for the glaze but I recommend whipped so it has a little more body.
Make sure not to over mix your ingredients fold them together until well combined. This makes for a perfectly fluffy loaf.
I also squeezed a some strawberries and mango to incorporate a little juice to the mixture.
Bake at 350 for 50-55 minutes. Let the loaf cool completely before glazing.
