FRENCH ONION SOUP WITH MUSHROOMS

An incredible, classic french onion soup with a twist, topped with nutty gruyere cheese and slices of toasted french baguette. The perfect comfort food for those colder months.

FRENCH ONION SOUP WITH MUSHROOMS

Ingredients
  

  • 2 Bay leaves
  • 2 Garlic cloves
  • 3 Onions
  • 3 Thyme, fresh sprigs
  • 2 qt Beef broth
  • 1 Salt and pepper
  • 1 French baguette
  • 2 tbsp Butter
  • 1 Gruyere, grated
  • 1 cup Red wine
  • 2 cups Sliced mushrooms

Instructions
 

  • First melt butter in a large pot over medium heat, add the onions and cook until onions are caramelized about 25 minutes. When onions are done, add garlic, bay leaves, thyme, salt and pepper until they combine nicely about a few minutes. Next add the mushrooms and wine, then bring to a boil. Reduce heat and simmer until the wine has evaporated. Next add the beef broth and cook for 15 minutes. Season, to taste, with salt and pepper.
  • When you're ready to serve, preheat the broiler. Arrange the baguette slices on the bowl of soup, sprinkle the slices with the Gruyere and broil until bubbly and golden brown, 3 to 5 minutes. Enjoy!
